Something yummy.
Something yummy happened at our place over the weekend. My mom found this granola bar recipe on the Whole Foods website (we're both obsessed with the whole foods blog; there is seriously some genius stuff on there) and had been dying to try it for quite some time. We substituted dry fruit for chocolate chips to make it a littttllleee bit more healthy (and to make it more chewy) but you can really use whatever ingredients you want to add.
You'll need:
4 cups of quick cooking oats
1/3 cup canola oil
2/3 cup honey
1 teaspoon vanilla extract
1/2 cup dried blueberries and dried cherries
1 cup chopped almonds and walnuts
one: preheat oven to 350°F. spread oats on an ungreased baking sheet.
two: bake for 15 minutes, stirring a couple of times.
three: allow oats to cool to room temperature.
four: combine remaining ingredients in a large mixing bowl.
five: add cooled oats.
six: spread mixture into a baking dish that has been sprayed or oiled, pressing down hard to compress it.
seven: bake for 25 to 30 minutes, or until golden brown.
eight: cool completely and cut into bars.
nine: eat. Major yum to say the least!
Let me know if you try this recipe and how it turns out. My mom and I are already thinking of other ways we can modify these granola bars with other ingredients (namely involving coconut; we're a little on the nerdy side when it comes to food).
